I'd say it's because we get all excited, and the blood starts pumping a little more, increasing circulation in the face and hence, the colour. It's also the case with embarrassing moments and exercise.
If it's a problem, you could try wearing a bit of foundation if you don't already. However, if putting a little bit on doesn't work, don't cake your face in the stuff, you'll look even worse and fake. I'd rather be red for a moment than look like I'd dipped my face in pancake batter. Besides, some guys think it's cute when a girl gets embarrassed. It makes them more comfortable around them, and they feel like the girl isn't this perfect scary ice queen.
